Reporter Profile:
He Pan is an Associate Professor in the Department of Geography at the University of Hong Kong. Previously, she served as a Senior Lecturer in Environmental Science and Sustainability at Cardiff University. Her research focuses on the environmental and health impacts of human consumption behaviors, with particular emphasis on sustainable food systems, climate-related risks, and socio-technical practices. She integrates environmental impact modeling with behavioral science approaches, including experiments, surveys, and interviews, aiming to provide scientific evidence for policymaking and systemic interventions. Her research findings have been published in leading international journals, including Nature Climate Change, Nature Food, Nature Sustainability, and One Earth. She has led or co-led several international collaborative research projects funded by major institutions in the United Kingdom and China, including the Royal Society International Exchange Programme, the National Natural Science Foundation of China, the China Postdoctoral Science Foundation, the GW4 Generator Fund, and the Nanjing University Young Scholars International Visiting Fellowship Program. Her work involves interdisciplinary collaborations with partners across the United States, the United Kingdom, China, and Europe, contributing to a deeper global understanding of how everyday human behaviors shape environmental and health outcomes.

Food consumption lies at the core of contemporary sustainable human–environment interactions, profoundly shaping environmental impacts, health outcomes, and social resilience. This presentation will introduce a series of multiscale studies, ranging from global patterns to household and individual behaviors, to explore how food consumption evolves across different contexts and how it generates diverse environmental, health, and socioeconomic outcomes. Employing a mixed-methods framework that integrates life cycle assessment (LCA), behavioral modeling, and advanced data analytics, this research investigates how environmental pressures, economic affordability, and surrounding environments jointly influence food-related behaviors across different countries and regions, including China, the United States, and Brazil. These studies reveal the socio-technical mechanisms underlying the emergence and mitigation of sustainability challenges, while highlighting cross-national differences in the environmental and nutritional trade-offs associated with everyday dietary choices. By integrating perspectives from cultural, behavioral, and environmental sciences, this body of research sheds light on scientific pathways toward promoting sustainable and equitable diets among diverse populations and across different national contexts.
